Yam is one of the popular vegetable of Tamil Nadu. This is otherwise called Elephant foot since it resembles an elephant foot. This yam is rich in fiber and carbs. They are always available fresh in Tamil Nadu. But here where we lives, this vegetable is vary rare. Even if they are available in stores, they won't be that fresh. So we usually get the frozen ones. This is one of the frozen veggies that I use here for emergencies.
